Ingredients

  • 1 cup Gluten-free rolled oats
  • 1 cup Rice flour
  • 1 cup Almond flour

  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Coconut oil, melted
  • 0.25 cup Honey
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped nuts (optional)
  • 0.5 cup Dried cranberries (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free rolled oats, rice flour, almond flour, baking powder, cinnamon, and salt. Stir together until evenly mixed.

In a separate bowl, whisk together the unsweetened applesauce, melted coconut oil, honey, egg, and vanilla extract. Mix well until smooth.
