Ingredients

  • 4 cups Broccoli florets
  • 2 tablespoons Olive oil
  • 1 large Red bell pepper
  • 1 large Carrot
  • 3 cloves Garlic
  • 3 tablespoons Tamari (gluten-free soy sauce)
  • 1 inch fresh piece Ginger
  • 1 teaspoon Sesame oil
  • 3 Green onions
  • 1 tablespoon Sesame seeds

Directions

Step 1

Wash and cut the broccoli into bite-sized florets. Set aside.

Step 2

Slice the red bell pepper into thin strips. Peel and julienne the carrot. Mince the garlic cloves. Peel and grate the ginger. Set all vegetables aside.

Step 3

In a large skillet or wok, heat the olive oil over medium-high heat.

Step 4

Add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

Step 5

Add the broccoli florets and carrot to the skillet. Stir-fry for about 4 minutes, until they begin to soften.

Add the sliced red bell pepper to the skillet and stir-fry for another 2 minutes.

Pour the tamari over the vegetables and stir to combine. Continue stir-frying for another 2 minutes until all the vegetables are tender-crisp and coated with the tamari.
