Ingredients

  • 250 g Gluten-free bread
  • 250 ml Milk
  • 2 large Eggs
  • 30 g Butter
  • 1 medium Onion
  • 2 tablespoons Parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 0.25 teaspoon Nutmeg
  • 50 g Gluten-free flour

Directions

Step 1

Cut the gluten-free bread into small cubes (about 1 cm) and place them in a large bowl.

Step 2

In a saucepan, heat the milk until warm, but not boiling, then pour it over the bread cubes. Stir gently and let it sit for about 10 minutes until the bread absorbs the milk.

Step 3

In the meantime, dice the onion and chop the parsley finely.

Step 4

Melt the butter in a skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Step 5

Add the sautéed onions and chopped parsley to the bread mixture.

Step 6

Lightly beat the eggs and add them to the bread mixture along with the salt, pepper, and nutmeg. Mix everything gently until combined.

Step 7

Gradually add the gluten-free flour to the mixture, stirring until it forms a thick dough that holds together.

Step 8

With damp hands, shape the mixture into dumplings about the size of a golf ball.

Step 9

Bring a large pot of salted water to a gentle boil. Carefully drop in the dumplings and let them cook for about 15 minutes. They will float to the top when done.

Step 10

Remove the dumplings with a slotted spoon and serve warm as a side dish.
