Ingredients

  • 3 pounds beef short ribs
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 medium carrot, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 4 cups gluten-free beef broth
  • 1 bay leaf
  • 6 sprigs fresh thyme, tied in a bundle
  • 2 tablespoons parsley, chopped for garnish

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Season the beef short ribs all over with salt and pepper.

Step 3

In a large Dutch oven, heat the olive oil over medium-high heat.

Brown the ribs in batches until well seared on all sides, about 10 minutes per batch. Transfer ribs to a plate.

In the same pot, add the chopped onion and cook until softened, about 5 minutes.

Stir in the garlic, carrots, and celery; cook until the vegetables are tender, about 5 more minutes.

Add the tomato paste and cook for another 1 to 2 minutes, stirring well to coat the vegetables.
