Ingredients

  • 1 cup Gluten-free all-purpose flour
  • 1 cup Milk
  • 3 large Large eggs
  • 0.5 teaspoon Salt
  • 2 tablespoons Butter
  • 1 cup Ricotta cheese
  • 4 ounces Cream cheese, softened
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest
  • 2 tablespoons Unsalted butter for frying
  • 1 tablespoon Powdered sugar
  • 0 Fresh berries or fruit preserve (optional)

Directions

Step 1

In a large mixing bowl, whisk together the gluten-free flour, milk, eggs, and salt until smooth. Ensure there are no lumps.

Step 2

Melt the 2 tablespoons of butter and whisk it into the flour mixture, blending until you have a thin batter. Let the batter rest for 10 minutes.

Step 3

While the batter rests, prepare the filling. In another bowl, mix together ricotta cheese, cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth and creamy.

Step 4

Heat a non-stick skillet or crepe pan over medium heat and lightly grease with a small amount of unsalted butter.

Step 5

Pour approximately 1/4 cup of batter into the pan, tilting to spread evenly and thinly.

Step 6

Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden brown. Flip and cook for an additional 30 seconds on the other side.

Step 7

Remove the blintz from the pan and place on a plate. Repeat with the rest of the batter, adding more butter to the pan as needed.

Step 8

Once all the blintzes are cooked, add 2 tablespoons of the cheese filling to the center of each blintz.

Step 9

Fold the sides over the filling and then fold the ends over, creating a neat package.

Step 10

Heat the frying pan again with 2 tablespoons of unsalted butter, cook the blintzes seam-side down for about 1-2 minutes until they are golden brown and the filling is warmed through.

Step 11

Transfer to serving plates, sprinkle with powdered sugar, and top with fresh berries or fruit preserve, if desired. Serve warm.
