Ingredients

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 pieces Gluten-free tortillas
  • 2 cups Shredded cheddar cheese
  • 0.5 cup Sour cream (optional)
  • 0.5 cup Salsa (optional)

Directions

Step 1

In a large skillet over medium heat, heat the olive oil.

Step 2

Add the diced onion and sauté for about 3 minutes until it starts to soften.

Step 3

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef to the skillet.

Step 5

Cook the beef, breaking it into crumbles, for about 7-8 minutes until browned and cooked through.

Step 6

Stir in the chili powder, cumin, salt, and black pepper and mix well. Remove the skillet from heat and set aside.

Step 7

In a clean, dry skillet over medium heat, place one gluten-free tortilla.

Step 8

Sprinkle about 1/4 cup of shredded cheddar cheese on half of the tortilla.

Step 9

Spoon a portion of the seasoned beef mixture over the cheese.

Step 10

Sprinkle additional cheese on top of the beef before folding the tortilla over, creating a half-moon shape.

Step 11

Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.

Step 12

Transfer the quesadilla to a cutting board and let it cool slightly before cutting it into wedges.

Step 13

Repeat the process with the remaining ingredients, serving the quesadillas warm with optional sour cream and salsa on the side.
