Ingredients

  • 250 grams Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 150 grams Cold unsalted butter
  • 60 ml Ice water
  • 1 large Egg
  • 1 tablespoon Olive oil
  • 300 grams Ground beef
  • 1 medium Onion
  • 2 Garlic cloves
  • 1 small Carrot
  • 2 tablespoons Tomato paste
  • 120 ml Gluten-free beef stock
  • 0.5 teaspoon Ground black pepper
  • 1 Egg yolk
  • 1 tablespoon Water

Directions

Step 1

In a large bowl, mix together the gluten-free flour, xanthan gum, and salt.

Step 2

Add the cold unsalted butter, cut into small cubes, into the flour mixture. Using a pastry cutter or your fingers, rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Gradually add the ice water, stirring until the dough begins to come together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Meanwhile, prepare the filling. Dice the onion, mince the garlic, and grate the carrot.

Heat the olive oil in a skillet over medium heat. Add the onion and garlic, cooking until softened, about 5 minutes.
