Ingredients

  • 12 pieces corn tortillas
  • 1 pound ground beef
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup vegetable oil
  • 0.5 cup cotija cheese
  • 0.25 cup fresh cilantro
  • 1 large lime
  • 0.5 cup sour cream
  • 0.5 cup salsa

Directions

Step 1

Finely chop the onion and mince the garlic cloves.

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Step 3

Add the chopped onion, garlic, ground cumin, chili powder, salt, and black pepper to the beef. Cook for an additional 3-4 minutes until the onion is translucent and the spices are fragrant.

Step 4

Remove from heat and set the beef mixture aside to cool slightly.

Step 5

Heat a small amount of vegetable oil in another skillet over medium heat. Briefly warm each corn tortilla in the skillet for about 15-20 seconds per side to make them pliable.

Step 6

Place about 2 tablespoons of the beef filling along the center of each tortilla. Roll the tortillas tightly to enclose the filling.

Step 7

Heat remaining vegetable oil in a large skillet over medium heat until shimmering.

Step 8

Place the rolled flautas seam-side down in the oil. Fry them in batches until golden and crispy, about 2-3 minutes per side.

Step 9

Remove the flautas using tongs and drain them on a plate lined with paper towels.

Step 10

Sprinkle cotija cheese and chopped cilantro over the flautas.

Step 11

Halve the lime and squeeze fresh lime juice over the flautas before serving.

Step 12

Serve the flautas with sour cream and salsa on the side for dipping.
