Ingredients

  • 12 Gluten-free corn tortillas
  • 1 pound Ground beef
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 2 Garlic cloves, minced
  • 1 large Red bell pepper, diced
  • 15 ounces Canned diced tomatoes
  • 4 ounces Canned green chilies
  • 1 teaspoon Ground cumin
  • 2 teaspoons Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Gluten-free red enchilada sauce
  • 2 cups Shredded cheddar cheese
  • 0.25 cup Chopped fresh cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, add the olive oil. Add the diced onion and garlic, and sauté for about 3 minutes until the onion becomes translucent.

Add the ground beef to the skillet. Cook until it's browned and fully cooked, about 7 minutes, breaking it apart with a spatula as it cooks.

Stir in the diced red bell pepper, canned diced tomatoes (with liquid), canned green chilies, ground cumin, chili powder, salt, and black pepper. Cook the mixture for about 5 more minutes until heated through.
