Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup gluten-free BBQ sauce
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 4 buns gluten-free hamburger buns
  • 2 cups coleslaw mix
  • 0.25 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar

Directions

Step 1

Preheat your grill or stovetop grill pan over medium-high heat.

Step 2

In a small bowl, mix together olive oil, salt, and ground black pepper. Brush this mixture over both sides of the chicken breasts.

Step 3

Place the chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.

Step 4

While the chicken is grilling, in a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Mix until the coleslaw is evenly coated. Set aside.

Step 5

Once the chicken is cooked, remove it from the grill and allow it to rest for a couple of minutes on a cutting board.

Step 6

Shred the chicken using two forks and transfer to a bowl. Add the gluten-free BBQ sauce and mix until the chicken is well coated with the sauce.

Step 7

If desired, briefly toast the gluten-free hamburger buns on the grill for a minute until lightly browned.

Step 8

Assemble the sandwiches by placing an even portion of the BBQ chicken onto the bottom half of each bun.

Step 9

Top the BBQ chicken with coleslaw, then finish with the top half of the bun.

Step 10

Serve immediately and enjoy your delicious gluten-free BBQ chicken sandwiches!
