Ingredients

  • 8 links gluten-free sausages
  • 2 tablespoons olive oil
  • 2 pounds potatoes
  • 4 tablespoons unsalted butter
  • 1 cup milk
  • 1 teaspoon salt

  • 2 whole large onions
  • 2 cups gluten-free chicken or beef stock
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Peel and chop the potatoes into even chunks. Place them in a large pot and cover with cold water. Add a pinch of salt.

Step 2

Bring the pot to a boil over high heat, then reduce to a simmer. Cook the potatoes for about 15-20 minutes, or until tender when pierced with a fork.

Step 3

While the potatoes are cooking, heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the gluten-free sausages and cook for 10-12 minutes, turning occasionally, until browned and cooked through. Remove from the pan and keep warm.
