Ingredients

  • 400 grams firm tofu
  • 100 grams cornstarch
  • 500 ml vegetable oil
  • 60 ml gluten-free soy sauce
  • 60 ml mirin
  • 250 ml dashi stock (gluten-free)
  • 50 grams grated daikon radish
  • 2 tablespoons green onions, chopped
  • 1 teaspoon ginger, grated

Directions

Step 1

Drain the tofu and wrap it in a clean kitchen towel or paper towels. Place a flat weight over it to press out excess water, leaving it for approximately 10 minutes.

While the tofu is being pressed, prepare the broth. In a small saucepan, combine the gluten-free soy sauce, mirin, and gluten-free dashi stock. Bring the mixture to a gentle simmer over medium heat. Once simmering, turn off the heat and set aside.

After pressing, cut the tofu into cubes of about 2 inches (5 cm) each.

Pour the cornstarch onto a plate and roll the tofu cubes in the cornstarch, making sure each cube is evenly coated.
