Ingredients

  • 2 pieces sirloin steak
  • 3 stalks leeks
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 1.5 tablespoons honey
  • 2 pieces garlic cloves
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon balsamic vinegar
  • 0.25 cup chicken or beef stock

Directions

Step 1

Clean the leeks thoroughly by trimming the dark green tops and roots, then slicing the stalks lengthwise and rinsing under cold water to remove any grit. Pat dry and slice into 1-inch rounds.

Step 2

Season both sides of the sirloin steaks generously with salt and black pepper. Let rest at room temperature while preparing the leeks and glaze.

Step 3

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the sliced leeks to the skillet and sauté for 8-10 minutes, stirring occasionally, until lightly caramelized and tender. Remove from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Sear the sirloin steaks for 3-4 minutes per side for medium-rare, or adjust cooking time to your preference. Remove the steaks from the skillet and tent them loosely with foil to rest.

Step 5

Lower the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant.

Step 6

Stir in the soy sauce, honey, balsamic vinegar, fresh thyme, and chicken or beef stock. Simmer the glaze for 2-3 minutes, stirring frequently, until slightly thickened.

Step 7

Return the leeks to the skillet and toss to coat them in the glaze. Taste and adjust seasoning with additional salt or pepper, as needed.

Step 8

Plate the rested sirloin steaks and spoon the glazed leeks over and around the steaks. Drizzle any remaining glaze from the skillet over the dish for added flavor.

Step 9

Serve immediately and enjoy your Glazed Sirloin with Leeks!
