Ingredients

  • 2 kg bone-in leg of lamb
  • 6 cloves garlic cloves
  • 4 sprigs fresh rosemary sprigs
  • 4 sprigs fresh thyme sprigs
  • 3 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper, freshly ground
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice, freshly squeezed

Directions

Step 1

Preheat your oven to 220°C (425°F).

Pat the leg of lamb dry with paper towels, then score the surface in a crosshatch pattern, cutting about 1 cm deep.

Peel and slice the garlic cloves into thin slivers.

Step 4

Insert the garlic slivers into the cuts on the lamb. Tuck pieces of rosemary and thyme into the cuts as well.

Rub the lamb with olive oil, then season generously with salt and freshly ground black pepper.
