  • 240 g Gluten-free all-purpose flour
  • 60 g Almond flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 170 g Unsalted butter (softened)
  • 200 g Granulated sugar
  • 4 large Eggs
  • 2 tsp Vanilla extract
  • 120 ml Milk (dairy or non-dairy)
  • 100 g Powdered sugar
  • 2 tbsp Fresh lemon juice
  • 1 tbsp Milk (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a loaf pan (9x5 inches) with butter or non-stick spray. Line the bottom with parchment paper for easy removal.

In a medium bowl, whisk together the gluten-free all-purpose flour, almond flour, baking powder, and salt. Set aside.

Using a stand mixer or hand mixer, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes.
