Preheat your oven to 180°C (350°F).
Rinse the pork loin under cold water and pat it dry with paper towels. Place it on a large sheet of aluminum foil.
In a small bowl, mix together the salt, ground black pepper, and minced garlic. Rub this mixture evenly all over the pork loin.
Place the rosemary sprigs on top of and underneath the pork loin. Wrap the foil loosely around the meat, sealing it securely to create a pouch. Place the foil-wrapped pork into a roasting pan.
