Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves (minced)
  • 0.5 cup Apricot preserves
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Soy sauce
  • 2 teaspoons Fresh thyme (chopped)
  • 0.25 cup Chicken broth
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Pat the chicken thighs dry with paper towels, then season them on both sides with salt and black pepper.

Step 3

Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, place the chicken thighs skin-side down and sear for 4-5 minutes until the skin is golden brown and crispy. Turn the chicken over and cook for another 2-3 minutes. Remove the chicken from the skillet and set aside.
