Ingredients

  • 250 grams All-purpose flour
  • 200 grams Sugar
  • 150 grams Butter
  • 4 pieces Eggs
  • 100 ml Milk
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 75 grams Raisins
  • 50 grams Dark chocolate (optional, for decoration)
  • 2 tablespoons Powdered sugar (for garnish)
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch round cake tin or line it with baking paper.

Step 2

In a large mixing bowl, cream the butter and sugar together until light and fluffy using an electric mixer or a wooden spoon.

Step 3

Add the eggs one at a time, beating well after each addition, and mix in the vanilla extract.

Step 4

In a separate bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 6

Gently fold in the raisins until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared cake tin, spreading it evenly. Tap the tin lightly on the countertop to remove any air bubbles.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the tin for about 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Optional: Melt the dark chocolate in a heatproof bowl over a pot of simmering water or in the microwave in 20-second intervals. Drizzle the melted chocolate over the cooled cake for an extra touch of luxury.

Step 11

Dust the top of the cake with powdered sugar as a final garnish before serving.

Step 12

Slice and serve the Gipsy Cake as a delightful dessert or with a warm cup of tea or coffee. Enjoy!
