  • 1 pinch Sea salt
  • 0.25 cup Shredded unsweetened coconut (for rolling)

Directions

Step 1

Place the pitted Medjool dates in a food processor and process until they form a sticky, cohesive paste. Scrape down the sides as needed.

Step 2

Add the rolled oats, crystallized ginger, shredded unsweetened coconut, ground cinnamon, vanilla extract, and sea salt to the food processor.

Step 3

Blend the mixture until it comes together into a thick, sticky dough. The mixture should hold together when pinched between your fingers.
