Ingredients

  • 500 grams boneless, skinless chicken breasts
  • 3 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 2 teaspoons cornstarch
  • 2 tablespoons sesame oil
  • 1 large red bell pepper, sliced
  • 200 grams broccoli florets
  • 2 medium carrots, julienned
  • 3 stalks green onions, chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons hoisin sauce
  • 3 tablespoons water
  • 1 teaspoon sesame seeds (optional)

Directions

Step 1

Thinly slice the chicken breasts into bite-sized strips and place them in a bowl.

Step 2

In a small bowl, combine soy sauce, grated ginger, minced garlic, and cornstarch. Pour this mixture over the chicken and toss to coat. Let it marinate for 10-15 minutes while preparing the vegetables.

Step 3

Heat 1 tablespoon of sesame oil in a large wok or skillet over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook for 3-4 minutes per side until golden brown and fully cooked. Remove the chicken from the pan and set aside.

Step 4

In the same pan, add the remaining sesame oil along with the vegetable oil. Toss in the red bell pepper, broccoli florets, and julienned carrots. Stir fry for 3-5 minutes until the vegetables are tender but still crisp.

Step 5

Return the cooked chicken to the pan with the vegetables. Add hoisin sauce and water, stirring everything together until evenly coated and heated through, about 2 minutes.

Step 6

Sprinkle the chopped green onions over the stir fry. Mix gently.

Step 7

Transfer the stir fry to a serving dish, garnish with sesame seeds if desired, and serve hot with steamed rice or noodles.
