Ingredients

  • 200 grams Silken tofu
  • 250 grams All-purpose flour
  • 150 grams Brown sugar
  • 100 ml Molasses
  • 60 ml Vegetable oil
  • 120 ml Almond milk (or other non-dairy milk)
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cloves
  • 0.5 teaspoons Salt
  • 2 tablespoons Optional powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and lightly flour a standard 9x5-inch loaf pan, or line it with parchment paper.

In a blender or food processor, blend the silken tofu until completely smooth and creamy. Set aside.

In a large mixing bowl, whisk together the brown sugar, molasses, vegetable oil, almond milk, and the blended silken tofu until well combined.
