Ingredients

  • 200 grams Granulated sugar
  • 150 grams Unsalted butter
  • 60 ml Golden syrup
  • 120 ml Heavy cream
  • 1 teaspoon Ground ginger
  • 50 grams Crystallized ginger, finely chopped
  • 0.5 teaspoon Sea salt
  • 100 grams Dark chocolate (optional, for dipping)

Directions

Step 1

Line an 8-inch (20cm) square baking pan with parchment paper, leaving a little overhang for easy removal later. Lightly grease the parchment with butter or non-stick spray.

Step 2

In a heavy-bottomed medium saucepan, combine the granulated sugar, unsalted butter, and golden syrup. Heat over medium-low, stirring occasionally, until the sugar has dissolved and the mixture is smooth.

Add the heavy cream and ground ginger to the saucepan, stirring to combine. Attach a candy thermometer to the side of the pan, making sure the tip is submerged but not touching the bottom.
