  • 85 grams brown sugar

  • 75 grams desiccated coconut
  • 250 grams icing sugar
  • 1.5 teaspoons ground ginger (for icing)
  • 50 grams unsalted butter (for icing)
  • 3 tablespoons boiling water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm x 20cm square baking tin with baking paper.

In a medium saucepan over low heat, melt 150 grams of butter, 85 grams of brown sugar, and 2 tablespoons of golden syrup. Stir until the mixture is smooth and the sugar has dissolved.

Remove the saucepan from heat and allow it to cool slightly.

In a large mixing bowl, sift together 150 grams of plain flour, 1 teaspoon of baking powder, and 3 teaspoons of ground ginger.
