Ingredients

  • 1.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground ginger
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoon Salt
  • 2 tablespoons Granulated sugar
  • 1.25 cups Milk
  • 1 teaspoon Fresh ginger (grated)
  • 1 Egg
  • 2 tablespoons Unsalted butter (melted)
  • 2 tablespoons Vegetable oil or butter (for cooking)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground ginger, baking soda, salt, and granulated sugar.

Step 2

In a separate medium bowl, combine the milk, grated fresh ginger, egg, and melted butter. Whisk until the mixture is smooth and well combined.

Step 3

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; some small lumps are fine.

Step 4

Preheat a nonstick skillet or griddle over medium heat. Lightly grease with a small amount of vegetable oil or butter.

Step 5

Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes.

Step 6

Flip the pancakes gently using a spatula and cook for an additional 2 to 3 minutes, or until the other side is golden brown.

Step 7

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 8

Serve the pancakes warm with your favorite toppings, such as maple syrup, honey, whipped cream, or fresh fruit.
