Ingredients

  • 1 lb pork tenderloin
  • 1 fennel bulb
  • 1 large carrot
  • 1 red bell pepper
  • 1 inch piece fresh ginger
  • 4 cloves garlic
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tsp rice vinegar
  • 1 tsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp vegetable oil
  • 1 tsp sesame seeds
  • 2 scallions
  • 4 servings cooked rice or noodles

Directions

Step 1

Cut the pork tenderloin into thin strips. Set aside.

Step 2

Thinly slice the fennel bulb, carrot, and red bell pepper. Peel and mince the ginger and garlic. Chop the scallions and separate the white and green parts.

Step 3

In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, brown sugar, cornstarch, and water. Stir until the sugar and cornstarch dissolve. Set the sauce aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the pork strips and stir fry for 3-4 minutes until browned and cooked through. Remove the pork from the pan and set aside.

Step 5

Add the remaining 1 tablespoon of vegetable oil to the pan. Toss in the fennel, carrot, and red bell pepper. Stir fry for 3 minutes until the vegetables begin to soften.

Step 6

Add the minced ginger, garlic, and the white parts of the scallions to the pan. Stir fry for 1 minute until fragrant.

Step 7

Return the cooked pork to the pan. Pour the sauce over the pork and vegetables. Toss everything together and cook for an additional 2-3 minutes until the sauce thickens and evenly coats the stir fry.

Step 8

Sprinkle with sesame seeds and garnish with the green parts of the scallions.

Step 9

Serve hot over cooked rice or noodles.
