Ingredients

  • 300 grams boneless, skinless chicken breast
  • 250 grams egg noodles
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 3 stalks scallions (green onions), sliced
  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 medium carrots, julienned
  • 1 medium red bell pepper, thinly sliced
  • 100 milliliters water or chicken stock
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 pieces lime wedges

Directions

Step 1

Boil a large pot of water and cook the egg noodles according to the package instructions. Drain and set aside, tossing the noodles lightly with half of the sesame oil to keep them from sticking.

Slice the chicken breast into thin strips and season lightly with salt and black pepper.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and stir-fry for 4–5 minutes, until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté for 30 seconds until fragrant.

Pour in the water or chicken stock and stir gently. Allow the mixture to simmer for 2-3 minutes.

Add the cooked noodles to the skillet and toss everything together using tongs or a large spoon, ensuring the noodles are evenly coated with the sauce and combined with the vegetables and chicken.
