Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 1 large carrot, peeled and diced
  • 4 cups vegetable broth
  • 2 medium potatoes, peeled and diced
  • 1 cup gin
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and cook for 3-4 minutes until it becomes translucent.

Step 3

Stir in the minced garlic, celery, and diced carrot. Cook for an additional 3 minutes, stirring occasionally.

Step 4

Pour in the vegetable broth and add the diced potatoes, fresh thyme, bay leaf, salt, and black pepper.

Step 5

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender.

Step 6

Remove the bay leaf and use an immersion blender to purée the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches to purée, then return it to the pot.

Step 7

Stir in the gin, heavy cream, and lemon zest, and cook for 5 more minutes on low heat, allowing the flavors to meld together.

Step 8

Taste and adjust seasoning as needed.

Step 9

Ladle the soup into bowls and garnish with chopped parsley before serving.
