Ingredients

  • 1 set Turkey giblets (neck, heart, gizzard, liver)
  • 4 cups Water
  • 1 medium Carrot (chopped)
  • 1 medium Celery stalk (chopped)
  • 1 medium Onion (quartered)
  • 1 piece Bay leaf
  • 1 sprig Thyme (fresh, optional)
  • 1 cup Drippings from roasted turkey (strained)
  • 4 tablespoons All-purpose flour
  • 2 tablespoons Unsalted butter
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Rinse the turkey giblets under cold water to remove any residue.

Step 2

In a medium saucepan, combine the giblets (except for the liver), water, carrot, celery, onion, bay leaf, and thyme.

Step 3

Bring the mixture to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 1 hour.

Step 4

Add the liver to the saucepan and simmer for an additional 30 minutes.

Step 5

Remove the giblets and vegetables from the broth using a slotted spoon. Discard the vegetables and bay leaf.

Step 6

Chop the cooked giblets (neck meat, liver, heart, and gizzard) into small, bite-sized pieces. Set aside.

Step 7

In a large skillet, melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, for 2-3 minutes until lightly browned and fragrant.

Step 8

Gradually whisk in the strained giblet broth (about 3 cups) and any reserved turkey drippings. Continue to stir to prevent lumps.

Step 9

Simmer the gravy for 5-7 minutes, stirring occasionally, until thickened to your desired consistency.

Step 10

Add the chopped giblets to the gravy and season with salt and black pepper to taste.

Step 11

Serve warm over mashed potatoes, roast turkey, or stuffing.
