Ingredients

  • 4.5 cups All-purpose flour
  • 0.25 cups Granulated sugar
  • 1 teaspoon Salt
  • 1.25 cups Whole milk
  • 8 tablespoons Unsalted butter
  • 2.25 teaspoons Active dry yeast
  • 2 Large eggs
  • 0.75 cups Light brown sugar
  • 0.5 cups Heavy cream
  • 2 cups Pecans, chopped and toasted
  • 2 teaspoons Ground cinnamon
  • 0.5 cups Dark brown sugar
  • 4 tablespoons Unsalted butter, softened

Directions

Step 1

In a large bowl, combine all-purpose flour, granulated sugar, and salt. Set aside.

Step 2

In a small saucepan, heat the milk and 8 tablespoons of unsalted butter over medium heat until the butter is melted and the mixture is warm but not hot (about 110°F).

Step 3

Sprinkle the active dry yeast over the warm milk mixture. Let it sit for 5 minutes until foamy.

Step 4

Pour the yeast mixture into the bowl of dry ingredients. Add the eggs and mix until a soft dough forms.

Step 5

Transfer the dough to a lightly floured surface. Knead for 8-10 minutes until smooth and elastic.

Step 6

Place the dough in a greased bowl, cover with a clean towel, and let it rise for 1-2 hours in a warm spot until doubled in size.

Step 7

While the dough rises, make the caramel topping. In a small saucepan, combine light brown sugar and heavy cream. Cook over medium heat, stirring constantly, until the sugar is fully dissolved. Remove from heat and pour the caramel mixture into a greased 9x13-inch baking pan. Sprinkle the chopped pecans evenly over the caramel.

Step 8

Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 16x12 inches.

Step 9

Spread the softened butter evenly over the dough. Sprinkle dark brown sugar and ground cinnamon over the buttered surface.

Step 10

Tightly roll the dough into a log starting from the long edge. Slice the log into 12 equal pieces.

Step 11

Place the dough pieces cut-side down into the prepared baking pan on top of the caramel and pecans. Cover with a clean towel and let them rise for an additional 30 minutes.

Step 12

Preheat your oven to 350°F (175°C).

Step 13

Bake the pecan rolls for 25-30 minutes or until golden brown and cooked through.

Step 14

Allow the rolls to cool slightly (about 5 minutes), then carefully invert the pan onto a large serving platter to release the caramel and pecans on top.

Step 15

Serve warm and enjoy your Giant Upside Down Pecan Rolls!
