Ingredients

  • 2 cups Gluten-free rolled oats
  • 0.5 cup Unsweetened shredded coconut
  • 0.25 cup Ground flaxseed
  • 0.5 cup Dried fruit (such as raisins, chopped apricots, or cranberries)
  • 0.5 cup Chopped nuts or seeds (such as almonds, walnuts, or sunflower seeds)
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 2 large Ripe bananas, mashed
  • 0.25 cup Pure maple syrup
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (180°C) and line a 9x9-inch baking dish with parchment paper, leaving an overhang for easy removal of the bars.

Step 2

In a large mixing bowl, combine the gluten-free rolled oats, shredded coconut, ground flaxseed, dried fruit, nuts or seeds, salt, and cinnamon. Stir until evenly mixed.

Step 3

In a medium bowl, mash the ripe bananas until smooth. Add the maple syrup, melted coconut oil, and vanilla extract. Mix well to combine.

Step 4

Pour the wet mixture into the dry ingredients and stir until everything is evenly coated and holds together.

Step 5

Transfer the mixture to the prepared baking dish, spreading it out evenly and pressing it down firmly with the back of a spoon or your hands to ensure it holds together when baked.

Step 6

Bake in the preheated oven for 25-30 minutes, or until the edges are golden and the center is set.

Step 7

Remove the baking dish from the oven and allow the breakfast bar to cool completely in the pan before lifting it out using the parchment paper overhang.

Step 8

Once cooled, cut into 8 bars. Store the bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week.
