Ingredients

  • 2 lbs Russet potatoes
  • 2 tsp Salt
  • 4 tbsp Butter
  • 0.5 cups Whole milk
  • 1 cup Sauerkraut (drained)
  • 4 slices Bacon (chopped)
  • 0.5 cup Yellow onion (finely diced)
  • 2 tbsp Fresh parsley (chopped)
  • 1 tbsp Fresh chives (chopped)
  • 0.5 tsp Black pepper

Directions

Step 1

Peel and cut the potatoes into 1-inch chunks. Rinse them under cold water to remove excess starch.

Step 2

Place the potato chunks in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Reduce the heat and let the potatoes simmer for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes cook, in a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon using a slotted spoon and set aside on a plate lined with paper towels.
