Ingredients

  • 400 grams spaghetti
  • 300 grams smoked sausage (e.g., bratwurst or kielbasa)
  • 2 tablespoons butter
  • 1 large onion
  • 2 garlic cloves
  • 200 ml heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon German whole-grain mustard
  • 50 grams grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.

Step 2

While the spaghetti is cooking, slice the smoked sausage into thin rounds. Heat a large skillet over medium heat and add 1 tablespoon of butter. Once melted, add the sausage slices and cook until browned, about 4-5 minutes. Remove the sausage from the skillet and set aside.

Step 3

Thinly slice the onion and mince the garlic. In the same skillet, add the remaining 1 tablespoon of butter. Once melted, add the onions and cook on medium-low heat, stirring occasionally, until caramelized, about 8-10 minutes. Add the garlic and cook for an additional 1 minute until fragrant.

Step 4

Pour the heavy cream into the skillet with the onions and garlic. Stir in the Dijon mustard and German whole-grain mustard until well combined. Let the sauce simmer for 2-3 minutes to thicken slightly.

Step 5

Return the cooked sausage to the skillet and stir to coat it in the sauce. Add the cooked spaghetti to the skillet and toss to combine. If the sauce is too thick, gradually add the reserved pasta water a little at a time until you reach your desired consistency.

Step 6

Stir in the grated Parmesan cheese and season with salt and black pepper to taste. Cook for 1-2 minutes, tossing frequently, until the cheese melts and the spaghetti is evenly coated.

Step 7

Garnish with chopped fresh parsley before serving. Serve warm and enjoy your German Spaghetti!
