Ingredients

  • 2 pieces (8 oz each) Ribeye steak
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 large (thinly sliced) Yellow onion
  • 4 sprigs Fresh thyme
  • 1 clove Minced garlic
  • 1 cup Beef stock
  • 2 tablespoons Heavy cream
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Remove the ribeye steaks from the refrigerator and allow them to come to room temperature (about 20-30 minutes). Pat them dry with a paper towel.

Step 2

Season the steaks generously on both sides with salt and freshly ground black pepper.

Step 3

Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil and 2 tablespoons of butter.

Step 4

Once the butter is melted and starts to foam, carefully place the steaks in the skillet. Sear each side for 3-4 minutes until a golden crust forms.

Reduce the heat to medium and add the fresh thyme sprigs and minced garlic to the skillet. Tilt the skillet slightly and use a spoon to baste the steaks with the butter mixture for about 1 minute.
