Ingredients

  • 400 grams pumpkin (peeled and cubed)
  • 200 grams egg noodles
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 3 tablespoons pickles (finely chopped)
  • 2 tablespoons parsley (chopped)
  • 0.5 red onion (thinly sliced)
  • 2 tablespoons pumpkin seeds (toasted)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.

Step 2

Place the cubed pumpkin on the baking tray. Drizzle with 1 tablespoon of olive oil, and sprinkle with ground cumin, smoked paprika, salt, and black pepper. Toss to coat evenly.

Step 3

Roast the pumpkin in the oven for 20-25 minutes, or until tender and slightly caramelized. Remove and let cool slightly.

Step 4

Cook the egg noodles according to the package instructions. Drain, rinse with cold water to stop the cooking process, and set aside.

Step 5

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, dijon mustard, apple cider vinegar, honey, and a pinch of salt and pepper to create the dressing.

Step 6

In a large mixing bowl, combine the roasted pumpkin, cooked egg noodles, chopped pickles, red onion, and parsley.

Step 7

Pour the dressing over the salad ingredients and toss gently until everything is well coated.

Step 8

Sprinkle the toasted pumpkin seeds on top for added crunch and garnish with additional parsley if desired.

Step 9

Serve immediately or chill in the refrigerator for 15-20 minutes for the flavors to meld. Enjoy your German Pumpkin Noodle Salad!
