Ingredients

  • 2 pounds Yukon Gold potatoes
  • 6 slices Bacon
  • 1 medium, diced Yellow onion
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Wash and scrub the potatoes. Leave the skins on and add them to a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 2

While the potatoes cook, heat a large skillet over medium heat. Add bacon slices and cook until crispy, about 8-10 minutes. Remove the bacon from the skillet and transfer to a plate lined with paper towels. Crumble the cooked bacon and set aside.

Step 3

Reserve 2 tablespoons of the bacon fat in the skillet and reduce the heat to medium. Add the diced onion to the skillet and cook for 4-5 minutes, stirring frequently, until softened and translucent.

Step 4

Add the apple cider vinegar, sugar, Dijon mustard, salt, and pepper to the skillet. Stir well and let the mixture come to a gentle simmer. Cook for 1-2 minutes, then remove from heat.

Step 5

Once the potatoes are done cooking, drain and let them cool slightly, just enough to handle. Cut the potatoes into bite-sized pieces.

Step 6

In a large bowl, combine the warm potatoes with the onion vinaigrette mixture, gently tossing to coat. Add the crumbled bacon and chopped parsley, mixing until evenly distributed.

Step 7

Serve the German Potato Salad warm, or let it cool to room temperature before serving. Enjoy as a side dish to grilled sausages, pork chops, or any hearty main course!
