Ingredients

  • 4 pieces pork chops
  • 4 large russet potatoes
  • 1 large yellow onion
  • 2 cups sauerkraut
  • 1 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Season the pork chops with salt and black pepper on both sides.

Step 2

Peel the potatoes and cut them into 1/4-inch thick slices. Set aside.

Step 3

Slice the onion into thin rings and set aside.

Step 4

In a large, heavy-bottomed skillet or Dutch oven, heat the vegetable oil over medium-high heat.

Step 5

Add the pork chops to the skillet and sear for 3-4 minutes on each side until golden brown. Remove the pork chops and set aside.

Step 6

In the same skillet, melt the butter. Add the sliced onions and cook for 5 minutes until softened and slightly caramelized.

Step 7

Add the potatoes to the skillet with the onions. Cook for another 5 minutes, stirring occasionally.

Step 8

Stir in the sauerkraut, chicken broth, apple cider vinegar, brown sugar, Dijon mustard, and caraway seeds. Mix well to combine.

Step 9

Place the seared pork chops back into the skillet, nestling them among the potatoes and sauerkraut mixture.

Step 10

Reduce the heat to low, cover with a lid, and simmer for 30-40 minutes, or until the pork chops are tender and the potatoes are fully cooked. Stir occasionally to prevent sticking.

Step 11

Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 12

Serve the pork chops and potatoes hot, garnished with fresh parsley if desired.
