Ingredients

  • 1 pound Kielbasa sausage
  • 4 medium (about 2 pounds) Russet potatoes
  • 1 large Yellow onion
  • 3 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 1 cup Chicken broth
  • 2 tablespoons (chopped) Fresh parsley
  • 1 teaspoon (adjust to taste) Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Place them in a bowl of cold water to prevent browning while prepping other ingredients.

Step 2

Slice the kielbasa sausage into 1/2-inch thick rounds and set aside.

Step 3

Peel and thinly slice the yellow onion. Mince the garlic cloves.

Step 4

Heat a large skillet or sauté pan over medium heat. Add 1 tablespoon of olive oil.

Step 5

Add the sliced kielbasa to the pan and brown on both sides, about 4–5 minutes. Remove from the pan and set aside.

Step 6

In the same pan, add the remaining 1 tablespoon of olive oil. Drain the potatoes and add them to the pan. Cook for 5 minutes, stirring occasionally, until they begin to brown.

Step 7

Stir in the sliced onion and continue to cook for another 5 minutes, allowing the onion to soften and caramelize slightly.

Step 8

Add the minced garlic, salt, black pepper, and paprika to the pan. Stir well to coat the potatoes and onions evenly in the spices.

Step 9

Pour in the chicken broth, cover the pan with a lid, and reduce the heat to medium-low. Simmer for 10 minutes, or until the potatoes are fork-tender.

Step 10

Return the browned kielbasa to the pan and stir to combine. Cook for another 3–5 minutes to heat the sausage through.

Step 11

Sprinkle the chopped fresh parsley over the dish as a garnish before serving.

Step 12

Serve hot and enjoy!
