Ingredients

  • 4 pieces fresh whole trout (cleaned and gutted)
  • 2 whole lemon
  • 1 bunch fresh parsley
  • 1 bunch fresh dill
  • 4 tablespoons olive oil
  • 4 cloves garlic cloves
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 100 milliliters white wine

Directions

Step 1

Rinse the trout under cold water and pat them dry with paper towels.

Step 2

Slice the lemons thinly and set aside. Mince the garlic cloves finely.

Step 3

In a small bowl, combine the olive oil, minced garlic, sea salt, and black pepper. Mix well.

Step 4

Brush the inside and outside of each trout generously with the olive oil mixture.

Step 5

Stuff the cavities of each trout with lemon slices, fresh parsley, and fresh dill. If desired, place a small pat of butter inside each fish for extra flavor.

Step 6

Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.

Step 7

Place the trout on the grill. Cook for 6-7 minutes on one side, then carefully flip and cook for another 6-7 minutes. The fish is done when the flesh flakes easily with a fork.

Step 8

Meanwhile, in a small saucepan, heat the white wine and remaining lemon slices over low heat for 5 minutes to create a light sauce.

Step 9

Once the trout is cooked, transfer them onto a serving platter.

Step 10

Drizzle the white wine and lemon sauce over the trout, garnish with additional fresh parsley, and serve immediately.
