Directions

Step 1

Peel and dice the potatoes into small, bite-sized cubes. Set aside.

Dice the onion and green bell pepper into small pieces. Mince the garlic cloves.

Heat the olive oil in a large skillet or cast-iron pan over medium-high heat.
