Ingredients

  • 2 lbs ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 28 oz diced tomatoes (with juices)
  • 15 oz kidney beans, drained and rinsed
  • 15 oz black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 cup barbecue sauce
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup water or beef broth (optional, for thinning)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 7-8 minutes. Drain excess fat if necessary.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Add the tomato paste and cook for 1 minute, stirring constantly.

Step 7

Stir in the diced tomatoes, kidney beans, black beans, barbecue sauce, apple cider vinegar, and brown sugar. Mix well to combine.

Step 8

If the chili is too thick, add water or beef broth, starting with 1/2 a cup and adjusting as needed.

Step 9

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 30 minutes, stirring occasionally.

Step 10

Taste and adjust seasonings, adding more salt or spice if desired.

Step 11

Serve hot with your favorite toppings, such as shredded cheese, sour cream, green onions, or cornbread on the side.
