Ingredients

  • 4 pieces Chicken thighs or drumsticks
  • 1 liter Chicken stock
  • 2 large Carrots
  • 2 medium Leeks
  • 2 pieces Celery stalks
  • 4 medium Potatoes
  • 2 tablespoons Butter
  • 200 milliliters Heavy cream
  • 2 large Egg yolks
  • 2 tablespoons Fresh parsley
  • 2 pieces Bay leaves
  • 2 pieces Thyme sprigs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and slice the carrots into thin rounds. Wash and slice the leeks into rings, and chop the celery into small pieces. Peel and dice the potatoes into chunks.

Step 2

In a large Dutch oven or heavy-bottomed pot, melt the butter over medium heat. Add the chicken thighs or drumsticks and sear on all sides until golden brown. Remove and set aside.

Step 3

In the same pot, add the carrots, leeks, celery, and potatoes. Sauté for 5-7 minutes until slightly softened.

Step 4

Add the chicken back to the pot, along with the chicken stock, bay leaves, thyme sprigs, salt, and black pepper. Bring to a gentle boil, then reduce the heat to low and simmer for 35-40 minutes, or until the chicken is cooked through and tender.
