Ingredients

  • 4 whole Gem squash
  • 1 cup Sweet corn kernels
  • 2 tablespoons Butter
  • 2 cloves Garlic
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cups Cheddar cheese
  • 1 tablespoon Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Wash the gem squash thoroughly, and cut them in half horizontally. Scoop out the seeds with a spoon.

Place the gem squash halves in a baking dish, cut-side up. Add a small amount of water (about 1/4 inch) to the bottom of the dish to help steam the squash as it bakes.

Mince the garlic finely. In a small skillet, melt the butter over medium-low heat, then add the minced garlic. Cook until fragrant, about 1 minute, and remove from heat.
