Ingredients

  • 2 8-ounce steaks Ribeye steak (or preferred cut)
  • 6 whole Garlic cloves
  • 2 sprigs Fresh rosemary sprigs
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 teaspoons Kosher salt
  • 1 teaspoon Freshly ground black pepper

Directions

Step 1

Remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature.

Step 2

Pat the steaks dry with paper towels and season both sides generously with kosher salt and freshly ground black pepper.

Step 3

Peel the garlic cloves and smash them lightly with the flat side of a knife to release their aroma.

Step 4

Heat a large cast-iron skillet over medium-high heat until very hot, about 2-3 minutes.

Step 5

Add the olive oil to the skillet and swirl to coat the bottom.

Step 6

Carefully place the steaks into the hot skillet and sear for 2-3 minutes without moving them, or until a golden-brown crust forms.

Step 7

Flip the steaks and sear the other side for an additional 2-3 minutes.

Step 8

Reduce the heat to medium-low and add the butter, smashed garlic cloves, and rosemary sprigs to the skillet.

Step 9

Tilt the skillet slightly and use a spoon to baste the steaks with the melted butter and garlic-infused juices for 1-2 minutes.

Step 10

Check the internal temperature of the steaks with a meat thermometer: 125°F for rare, 135°F for medium-rare, 145°F for medium. Adjust cook time as necessary.

Step 11

Remove the steaks from the skillet and place them on a cutting board. Tent them loosely with aluminum foil and let rest for 5-7 minutes.

Step 12

Slice the steaks against the grain and serve with the garlicky butter sauce drizzled over the top.
