Ingredients

  • 300 grams fresh cranberries
  • 5 cloves garlic
  • 100 grams granulated sugar
  • 60 ml apple cider vinegar
  • 120 ml water
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground ginger
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the garlic cloves and toss them with olive oil. Place them on a small, oven-safe dish and roast in the preheated oven for 15 minutes, or until they are golden brown and softened.

Step 3

While the garlic is roasting, combine the cranberries, sugar, apple cider vinegar, water, ground cinnamon, and ground ginger in a medium-sized saucepan.

Step 4

Cook the cranberry mixture over medium heat, stirring occasionally, for 10-15 minutes, or until the cranberries have burst and the mixture has thickened slightly.

Step 5

Remove the roasted garlic from the oven and allow it to cool for a few minutes. Mash the cloves into a paste using a fork.

Step 6

Stir the garlic paste into the cranberry mixture. Add salt and black pepper to taste, mixing well to combine.

Step 7

Let the chutney simmer for another 2-3 minutes, then remove it from the heat.

Step 8

Allow the Garlicky Cranberry Chutney to cool to room temperature. Transfer it to an airtight container and refrigerate until ready to serve.

Step 9

Serve the chutney as a condiment alongside roasted meats, as a spread for sandwiches, or as a topping for cheese and crackers.
