Ingredients

  • 500 grams Prawns (large, peeled and deveined)
  • 5 cloves Garlic (finely minced)
  • 1.5 teaspoons Ground white pepper
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 2 teaspoons Cornstarch
  • 3 tablespoons Vegetable oil
  • 2 stalks Scallions (thinly sliced for garnish)
  • 1 piece Red chili (sliced, optional for garnish)

Directions

Step 1

Rinse the prawns under cold water and pat them dry with a paper towel. Set aside.

Step 2

In a small bowl, combine soy sauce, oyster sauce, Shaoxing wine, and cornstarch. Mix well to create a marinade.

Step 3

Pour the marinade over the prawns and let them marinate for 10 minutes.

Step 4

Heat a wok or large skillet over medium-high heat and add 2 tablespoons of vegetable oil.

Step 5

Once the oil is hot, add the minced garlic and stir-fry for 20-30 seconds until fragrant.

Step 6

Add the marinated prawns to the wok and stir-fry for 2-3 minutes until they start to turn pink.

Step 7

Sprinkle the ground white pepper evenly over the prawns and continue cooking for another 2-3 minutes, stirring occasionally, until the prawns are fully cooked and coated in the sauce.

Step 8

Drizzle the remaining 1 tablespoon of oil over the prawns if needed for extra sheen and flavor.

Step 9

Transfer the cooked prawns to a serving plate and garnish with sliced scallions and red chili if desired.

Step 10

Serve immediately with steamed rice or as a standalone dish.
