  • 3 whole garlic bulbs

  • 2 medium celery stalks
  • 2 medium carrots
  • 1 bunch fresh parsley
  • 4 sprigs fresh thyme
  • 2 whole bay leaves
  • 1 teaspoon black peppercorns
  • 1 teaspoon salt
  • 10 cups water

Directions

Step 1

Peel the garlic bulbs, separating and smashing the cloves with the side of a knife to release their oils. No need to chop them finely.

Roughly chop the onion, celery, and carrots into large chunks. They will add flavor and do not need to be perfectly uniform.

In a large stockpot, combine the garlic, onion, celery, and carrots. Add the parsley, thyme sprigs, bay leaves, and black peppercorns.
