Ingredients

  • 4 pieces Roma tomatoes
  • 5 pieces Garlic cloves
  • 0.5 pieces White onion
  • 1 piece Jalapeño pepper
  • 0.5 cup Cilantro leaves
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Rinse the Roma tomatoes, garlic cloves, white onion, cilantro, and jalapeño pepper under cold water.

Step 2

Preheat a skillet or grill pan over medium heat. Add the Roma tomatoes, garlic cloves (with their skins on), half white onion, and jalapeño pepper to the pan.

Step 3

Char the vegetables for 4-5 minutes, turning occasionally, until the tomatoes and jalapeño have blistered skins and the garlic and onion develop a slight caramelization. Remove from heat.

Step 4

Peel the garlic cloves and remove the stem from the jalapeño. If you prefer less heat, deseed the jalapeño as well.

Step 5

In a blender or food processor, combine the charred tomatoes, peeled garlic, onion, jalapeño, cilantro leaves, lime juice, olive oil, salt, and black pepper.

Step 6

Pulse the ingredients until a chunky or smooth consistency is achieved, depending on your preference.

Step 7

Taste and adjust seasoning, adding more salt, lime juice, or black pepper if needed.

Step 8

Serve immediately or refrigerate for at least 30 minutes to allow the flavors to meld. Enjoy with tortilla chips or as a condiment for your favorite dishes.
