Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 4 garlic cloves, minced
  • 3 fresh rosemary sprigs
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup chicken broth
  • 1 tablespoon unsalted butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.

Step 3

Heat a large oven-safe skillet over medium-high heat and add the olive oil.

Step 4

Place the chicken thighs in the skillet, skin-side down, and cook for 4-5 minutes until the skin is golden brown and crispy. Flip the chicken and cook for another 2 minutes. Remove the chicken and set aside.

Step 5

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 6

Add the chicken broth, lemon juice, and rosemary sprigs to the skillet, scraping up any browned bits from the bottom of the pan with a wooden spoon.

Step 7

Return the chicken to the skillet, skin-side up, and spoon some of the sauce over the top.

Step 8

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Step 9

Remove the skillet from the oven and place it back on the stovetop over low heat. Add the butter to the sauce and swirl until melted and combined.

Step 10

Spoon the sauce over the chicken before serving. Garnish with additional rosemary, if desired, and serve warm.
