Ingredients

  • 2 whole red bell peppers
  • 3 whole garlic cloves
  • 2 tablespoons olive oil
  • 4 ounces cream cheese
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 0.25 teaspoon cayenne pepper (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Cut the red bell peppers in half and remove the seeds and stems. Place them cut-side down on a baking sheet lined with parchment paper.

Add the garlic cloves (with skins on) to the baking sheet and drizzle the peppers and garlic with 1 tablespoon of olive oil.

Roast in the preheated oven for 20-25 minutes, or until the skins of the peppers are charred and blistered.

Remove the baking sheet from the oven. Transfer the roasted peppers to a bowl and cover with plastic wrap for 10 minutes to allow the skins to loosen.
