  • 4 pieces medium-sized russet potatoes
  • 4 tablespoons unsalted butter

  • 3 cloves garlic cloves
  • 2 teaspoons fresh rosemary
  • 2 teaspoons fresh thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons parmesan cheese (optional)
  • 1 tablespoon chopped parsley (for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Wash the potatoes thoroughly and pat them dry. Make sure to leave the skins on for texture and flavor.

Place each potato on a cutting board and position two chopsticks or wooden spoons alongside it on either side. This will help prevent cutting all the way through the potato.
